Pumpkin (Butternut) Pie Recipe

2 Cups butternut squash (prepared)

2 Eggs

1 1/2 Cup brown sugar

2 Tbs. vanilla

1 tsp. nutmeg

1 tsp. cinnamon

2 tsp. pumpkin pie spice

Preparing Butternut Squash

Cut butternuts in half lengthwise, scoop out seeds.  Place in baking dish, skin side down, and add 1/2" water.  Bake at 350 degrees until very soft, approximately 45-60 minutes (depending on size).

Mix all together and pour into a pre baked 9" pie shell.  Bake at 350 degrees for 20-30 minutes or until knife inserted in middle comes out clean.

Thank you! I have been wanting to sub squash for pumpkin in a pie but was uncertain if it could be done without modifications to a traditional pumpkin pie recipe. Many thanks ladies, for your help ... especially because I LOVE butternut squash and grow it in abundance!

Thank you for this recipe! Here in Argentina, we cannot get some of the ingredients for the traditional (typical) American pumplin pie. Many recipes call for sweetened condensed milk or even evaporated milk. I've been looking for a recipe that doesn't call for either of these. Also, butternut squash is abundantly available down here so this is an added plus! We usually just steam ours instead of baking it. Thank you! God bless you!
